A blend of different Arabica origins, grown with respect for soils and people, blended together to make a coffee that is easy - drinking and friendly to everyone, even those who are approaching the world of specialty coffees for the first time.

It is composed of 80 percent Klem, a coffee from a Brazilian cooperative in the Montequiera region that is certified organic: 20 percent Lupuna, from the Peruvian chain of 7 Elements, who grow permaculture in the Amazon rainforest.

Fazendas Klem are located in the Mantas de Mina region, near the mountain of the Atlantic Forest. Their coffees are 100 percent organic and meet world-class social, economical and environmental  standards.

In their Fazendas they have an excellent combination of coffee, avocado and banana that makes the crops and natural forest where the whole ecosystem coexists.

Natural

In the "natural" process, the coffee beans are sun-dried while still in the cherry. The beans thus have more time to interact with the fruit's natural sugars thanks to enzymes that break down the mucilage around the beans.

"Natural" coffees therefore tend to have more fruity and fermented flavors.

Lupuna is a blend of different botanical varieties of arabica grown in permaculture in the heart of the Peruvian Amazon rainforest. There are 12 families from the Yanesha community, which inhabits the Oxapampa biosphere, who produce the coffee destined for this batch.

The name of this coffee is the same as the majestic tree, more than 70 meters tall, that stands in the heart of the Tsachopen settlement and in its branches houses animals and plants, standing as an emblem of permaculture practise.

Washed

The "Washed" process involves extracting the coffee beans from then cherries and the thoroughly washing them to remove all attached mucilage.

This process is the method that most enhances the coffee itself - the origin, the coffee variety- the terroir, because there are no sugars from the cherry or mucilage that ferment and have an organoleptic impact on the bean.

Permaculture

La permaculture is a method of cultivation and landscape design based on the natural coexistence and mutual virtuous action of complementary crops, without the use of any chemicals. Coffee fits into a thicket of other productions, partly for community consumption, partly for trade. The coffee produced here, imported directly, is paid at a guaranteed fair price

The project: The 7 Elements

The 7 Elements is a project created by NGO 7 Elements Peru, which is involved in permaculture cultivation and export of specialty coffee produced by the Yanesha community in the Peruvian biosphere of Oxapampa.

A collaboration between local indigenous families and the organization has brought a repopulation of these areas of the Amazon Rainforest and ensured new fertility to these lands

  Roasting

We choose a medium roast that allows the aromatic aspects of the coffee to evolve without covering  its characteristics: a high quality green coffee does not need to be burned to be good

For us, coffee is a comfort good; in roasting we try to develop smooth aromas and flavors that are accessible to all.
